This is how to smoke salmon. First remove any skin from salmon fillets. Place salmon fillets in shallow baking dish and pour maple syrup on top. Flip fillets in dish to coat both sides. Sprinkle each side lightly with salt then cover and refrigerate for 24 hours. Start the SmokePistolÂ® smoking and place fillets in smoker for about 1 1/2 hours without heat (cold smoke). Bring smoker to 160 degrees F and continue smoking for 25 minutes. Remove the salmon from the smoker and place in a buttered skillet on the cook top. Cook smoked salmon fillets in skillet for about 2 minutes per side on medium heat. This makes the maple glaze on the surface of the salmon.
