INGREDIENTS:

  • several boneless, skinless chicken breasts
  • Garlic Pepper
  • 1/2 cup plain salt (non iodized)
  • 1/4 cup Cajun seasoning
  • 1 SmokePistol®Outcooker Special Blend SmokePistol cartridge

Preparation and how to smoke chicken breast

Wash and clean up chicken breasts. In a non-reactive container make a brine solution by mixing 1/2 gallon of water, 1/2 cup of plain salt, 1/4 cup of Cajun seasoning and stir until salt is dissolved. Place chicken breasts in the brine and refrigerate for about 2 hours. Remove the chicken breasts and pat dry with paper towel. Place chicken in shallow baking dish and sprinkle garlic pepper on both sides. Place chicken on racks or on skewer and let dry over sink for about 15 minutes. Start the SmokePistol Outcooker Special Blend cartridge smoking and place chicken in smoker for about 1/2 hour without heat (cold smoke). (Cold smoking is safe with the SmokePistol because the heat is outside the smoker.) Bring smoker to 225 degrees F and continue smoking for about 3 hours.
